TIP

It is not advisable to cover the brewpot during the brewing process. Boil-overs are wasteful, messy, and time-consuming.

Racking (Transfer) Day

Sanitize racking equipment (racking cane, tubing, carboy, stopper).

Siphon or “rack” beer from primary fermenter to glass carboy; leaving yeast and protein residue in fermenter. Seal carboy with airlock and stopper. Place in cool, dark location.

Allow beer to age and clarify (typically for 2 weeks; additional week or two for higher gravity/higher alcohol content brews such as barleywine or doppelbock).
